Sweet & Spicy Baby Back Ribs (Champion Edition)




3 racks baby back pork ribs (4 to 5 pounds, total)





Ingredients


  1. 3 racks baby back pork ribs
  2. Brown Sugar
  3. Cinnamon
  4. Cayenne
  5. 4 paprika
  6. Chili powder
  7. Red pepper flakes
  8. Garlic powder
  9. 2-onion powder
  10. Ground pepper
  11. Ketchups
  12. Wine vinegar
  13. Honey
  14. Soy sauce
  15. Lemon juice
  16. Salt
  17. Ground ginger
  18. Tabasco or hot pepper sauce
  19. Onion, diced
  20. Clove garlic, chopped fine



The Rub


  • 1 cup of brown Sugar
  • 1/2 cinnamon
  • 1-teaspoon cayenne
  • 2/4-cup paprika
  • 1 tablespoon of chili powder
  • 1 tablespoon of red pepper flakes
  • 2 tablespoons garlic powder
  • 2 tablespoons of onion powder
  • 2 teaspoon of ground pepper





The Honey BBQ Sauce


  • 1 & ¾ ketchups
  • 3/4 wine vinegar
  • 1/2-cup honey
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1 1/2 tsp Tabasco or hot pepper sauce
  • 1 medium onion, diced
  • 1 clove garlic, chopped fine
  • 1 cup of brown sugar


Cook onion and garlic in hot oil approximately 10 minutes, then add balance of ingredients, heat to boiling, reduce heat and simmer uncovered about 20 minutes or until sauce slightly thickens.



Directions


  • Place a rack of ribs meat-side down on a baking sheet Remove the thin, papery membrane from the back of the rack.

  • Remove any extra fat from the rib. (Optional)

  • Sprinkle the rub over both sides of the ribs (Advance Preparation let marinate in rub for 1-4 hours prior)

  • Place wood chips in water to soak (Soak overnight for favor)

  • Put wood chips in burner in the smoker box

  • Preheat smoker

  • Place ribs on smoker

  • Cook between these ranges of heat 190 – 250 degrees F

  • Check ribs every 30mins – 1 hour

  • Check occasional to see if the meat has shrink back from the bone

  • When the ribs have reach a internal temperature of 180 degrees the ribs are done

  • takes ribs out on plate or plater

  • let ribs rest for 10mins

  • Glazed the ribs with honey bbq sauce and serve
